How often should a grease trap be cleaned?+
DEP sets no fixed interval. It requires every interceptor to be cleaned as frequently as necessary to avoid exceeding its rated capacity. The widely used 25% rule, cleaning before grease reaches a quarter of the liquid depth, is an industry operating convention rather than a DEP requirement. In practice most restaurants land on monthly or quarterly, and high-volume kitchens go shorter.
What happens if I don't clean my grease trap?+
A neglected grease trap leads to drain backups, odors and health code violations. DEP put the maximum penalty for non-compliance with the sewer use rules at $10,000 per day, per violation, as of September 2026. The bigger practical cost is usually a backed-up line during service.
